Recipe: Banana Berry Muffins


Non-stick spray
1 ½ cup rolled oats
1 cup whole-wheat flour
½ cup ground flaxseed
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon ground cinnamon
3 bananas, mashed
2/3 cup Fruit Sweet® or agave*
2 egg whites
2 tablespoons applesauce
1 teaspoon vanilla
1 ½ cup fresh or frozen blueberries

*available in health-food stores

Preheat oven to 400 degrees. Coat 12 muffin cups with non-stick spray. In a large bowl, mix oats, flour, flaxseed, baking powder, baking soda and cinnamon. In a medium bowl, mix bananas, Fruit Sweet®, egg whites, applesauce, and vanilla. Pour liquid mixture into flour mixture and stir to combine. Stir in blueberries. Spoon into the muffin cups, filling them about ¾ full. Bake 20-25 minutes, until golden brown. Let cool 5 minutes then remove from cups.
