Recipe: Chocolate Tofu Mousse

Makes 6 servings

1 ½ cups silken firm tofu (16oz)
10 oz Sunspire brand grain sweetened chocolate chips
5-6 tablespoons agave syrup*
1 package of strawberries, cleaned and sliced
1 teaspoon pure vanilla extract
12 individual organic wheat filo cups*, defrosted
pinch of sea salt

*available in health-food stores

Blend tofu in food processor (or blender) until creamy. Melt chips in double boiler and blend with tofu, agave, vanilla, and a pinch of sea salt. Spoon into filo cups and garnish each with a strawberry slice before serving. (Chocolate can be refrigerated, but if so, blend in food processor again to restore creamy consistency before filling filo cups and serving).
