Recipe: Oat Bran Muffins

1 cup chopped apple
1 cup chopped pitted prunes
½ cup agave syrup
½ cup non-dairy milk
2 tablespoons canola oil
2 egg whites or 1 whole egg
1 teaspoon cinnamon
2 teaspoons freshly grated orange peel
2 cups oat bran
2 teaspoons baking powder
½ teaspoon salt (optional)

Preheat oven to 400 degrees. Line muffin tin with paper muffin cups. Prepare apples and prunes and set aside. Whisk together agave, milk, oil and egg. Combine cinnamon, orange peel, oat bran, baking powder and salt in a medium mixing bowl. Fold liquid mixture into the dry mixture, just until the liquids are absorbed. Stir in apples and prunes. Fill muffin cups almost to the top. Bake 20 minutes or until golden and a knife comes out clean.

12 muffins, each with 150 calories, 29 g carbohydrates, 4 g fiber, 3 g protein, 4 g fat
