Importance of color in fruit and vegetables?

Question from Juicyfruit: Could you talk about the recommendation I've read that suggests eating lots of different colors of fruits and veggies? What is it about colors that's important, or is it something else?
Answer —Cyndi Thomson, Ph.D., R.D.: The colors or the pigments in vegetables and fruits reflect certain phytochemicals and these are biologically active compounds that promote health. For example, some are antioxidents, some reduce inflammatory response, some may modify insulin levels, etc. So when you get a variety of color you get a variety of phytochemicals and a variety of health-protective activities in your body.
